Honey Chicken Pineapple Boats

This recipe was delicious and super easy! Patrick and I both loved it, and I’ll be adding it to our dinner rotation. Along with the chicken, I cooked regular white rice. This is a crockpot recipe, btw!

Honey chicken recipe:

1 pineapple
1 lb chicken tenders
3 Tbsp olive oil
1 cup honey
1/2 cup soy sauce
1 Tbsp sesame oil
1 tsp salt and pepper

Place slightly thawed chicken and all other ingredients into the crockpot. (You could even freeze the chicken and ingredients in a ziplock bag and dump it in the crockpot for a quick meal when needed.) Cook on Low for 4-5 hours. Or on High for 2-2.5 hours.


It’s almost time to eat! The last step is making the pineapple boat. The first thing is to cut the pineapple in half and then cut a rectangle/square boarder around the inside of the pineapple. I found it best to cut three stripes out of the rectangle in order to spoon out the pineapple chunks easier. Once you have your pineapple boat, you can scoop some chicken and rice into either half. That’s it! Now you can eat and worry less about having extra dishes since you made your own bowl! Ciao!
